  • 2 cups bulgur
  • 2 cups hot water
  • 1 onion
  • 1 cup fine semolina
  • 1 egg
  • 1 tbsp pepper paste
  • 3-4 tbsp flour
  • Salt, black pepper
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp hot red pepper powder
  • 2 cloves of garlic
  • 1 cup olive oil
  • 2 tbsp pepper paste
  • 1 tbsp tomato paste
  • 1 bunch of parsley
  • Salt, black pepper
How is it done?

Put the bulgur in a bowl. Add hot water and let it steep for about 4 minutes. Meanwhile, grate the onions. Add the grated onion and the remaining ingredients to the bulgur. Knead all the ingredients until well combined. Take walnut-sized pieces of the mixture, roll them into balls. Press your finger in the middle of each ball to give them a button shape and place them on a tray dusted with flour.

To prepare the sauce, sauté the mashed garlic and tomato paste in olive oil. Once the aroma of the tomato paste is released, remove from heat and add half of the finely chopped parsley. Transfer the sauce to a large bowl. Boil the meatballs in salty boiling water. When the meatballs start to float, remove them with a slotted spoon and transfer them to the bowl with the sauce. Mix well to coat all the meatballs with the sauce and place them on a serving dish. Garnish with strained yogurt and serve.
