Hash Browns from Ekin

Materials for the Recipe
  • 1 cup of Ekin rice
  • 2 carrots
  • 3 eggs
  • 10-15 sprigs of parsley
  • 3 tablespoons of flour
  • 100 g grated cheddar cheese
  • 1 teaspoon of salt
  • 1 teaspoon of ground red pepper
  • 1 teaspoon of black pepper
  • 1 teaspoon of mint
  • 1 teaspoon of vegetable oil
  • 1 bowl of yogurt
  • 2 cloves of garlic
  • 1 teaspoon of basil
How is it done?
  1. Grate the carrots into a mixing bowl, add cooked Ekin rice, finely-chopped parsley, flour, egg, cheddar cheese, salt and spices, and mix them well.
  2. Heat vegetable oil in a pan until it is hot.
  3. Once the oil is hot, spoon the hash browns into the pan and cook on low heat, flipping both sides until they get golden brown.
  4. Mix yogurt, grated garlic and basil to prepare the sauce.
  5. Serve the hash browns with the sauce.
