  • 1 cup cracked wheat for pilaf
  • 1 cup beet pickling liquid
  • 1 cup pickled beets
  • 5 tbsp canned corn
  • Half a bunch of dill
  • Half a bunch of green onions
  • Half a bunch of arugula
  • Half a bunch of parsley
  • 4 tbsp olive oil
  • Juice of 1 lemon
  • 1 tsp salt
How is it done?
  1. Cook Ekin bulgur and beet pickles juice in a pot until the bulgur softens and swells.
  2. Remove from heat and let it cool.
  3. Transfer the cooked bulgur in beet juice to a large bowl.
  4. Add diced pickled beets, canned corn, chopped greens, olive oil, lemon juice, and salt and mix well.
  5. Pour into a cup and shape by flipping it over.
  6. Serve cold.
