Ekin’s Rice with Mussels

  • 2 cups of rice
  • 1 kg of mussels
  • 1 clove of garlic
  • 2 tablespoons of butter
  • 1 lemon
  • 1 tablespoon of grated tomato
  • Allspice
  • ½ bunch of parsley
  • Salt
  • Black pepper
How is it done?
  1. Sauté the mussels in a pan with parsley stems until they open and set aside.
  2. In a separate large pan, melt butter and sauté the garlic lightly.
  3. Add the Ekin rice, which has been thoroughly washed.
  4. When the color changes, add grated tomato, lemon juice, and spices.
  5. Finally, add the sautéed mussels and cook over low heat with 2 cups of hot water.
  6. After cooking, garnish with finely chopped parsley and serve.
