For this easy and quick recipe, simply blend the cooked Ekin chickpeas and spices in a food processor until they get smooth. Follow the instructions carefully when adding the egg mixture. Finally, garnish it with parsley as desired. It’s as simple as that!

  • 1,5 cups of chickpeas
  • 2 cloves garlic
  • ½ cup tahini
  • 1 handful walnuts
  • 1 tsp ground red pepper
  • 1 tsp paprika
  • 1 pinch of salt
  • 1 tbsp pepper paste
  • ½ lemon juice
  • ½ cup olive oil
  • 2 tbsp butter
  • 2 eggs
  • 1 pinch of salt
  • 1 handful parsley
  • 2 tbsp olive oil
How is it done?
  1. Boil the chickpeas in advance.
  2. Then blend all the ingredients for the mashed mixture with a blender until they get smooth.
  3. Take the mashed mixture into a mixing bowl.
  4. Next, melt the butter in a pan to prepare the eggs, crack the eggs, and cook it by stirring.
  5. After adding salt, remove it from heat and pour directly onto the mashed mixture, and stir it with a spatula.
  6. Finally, add finely-chopped parsley to the mixture and stir it.
  7. Take the mashed mixture to a serving plate, drizzle with a little more olive oil, and serve it.
